- A quotation from the Foreword describes the scope of this handbook: "The composition of materials taken into the plant or animal, the ways in which these nutritional materials become part of the organism, the energy exchange, and metabolic end products are dealt with in various sections of this data book." Food composition and energy values are tabulated for many types of foods--milk and dairy products, foods of animal origin, foods of plant origin. Tables of minerals, vitamins, fatty acid composition, and amino acid composition, nutritive value per pound, and nutrient stability are included. Common non-nutritive components of foods are listed, as well as nutritional standards for adults and children. Digestion and absorption, metabolic pathways, and metabolic end products also are represented in numerous tables and extensive references.
